Are you a meal planner in your home? Evidence shows that when you plan your meals for the week that you eat more healthy and are better able to stay within the confines of a budget. In addition, when you have to work around food allergies, it makes last minute runs to a drive-thru much more challenging. Personally, I am a loose meal planner (as in I don’t write it down and am flexible). I usually have the week’s meals planned out in my head based on the week’s grocery ads and pantry/freezer stock. I have found that my week is much less chaotic if I have planned ahead for what we will eat. So, I have decided this week’s meal plan with you.
On the Willing Cook’s Meal Plan for this week…
Sunday: Baked Salmon (delicious!), Spinach Salad, Chips & Salsa
Monday: Pork Roast, Baked Butternut Squash and Apples
Tuesday: Autumn Chopped Salad (this week’s Willing Cook-A-Long recipe challenge) with Grilled Chicken Strips
Wednesday: Jap Chae (if I can get to the store to buy sweet potato noodles)
Thursday: Buffalo-Style Chicken Legs, Brown Rice & Steamed Vegetables
Friday: Burgers & Dill Potato Wedges, fruit
Saturday: “Refrigerator Roundup” (leftovers from the week)
Dessert: Banana Bread or Muffins

My friend at Wishing for Pine Noodles had a great post yesterday on how planning ahead with dinners allows her family to have an enjoyable and relaxing weekend.
