We’re back to the grind of normal after an enjoyable week with family at the beach. I am happy to report that my meal planning paid off tremendously. It was good to plan, but to also be flexible. We were able to feed about 15 people on the meals I planned, making them delicious, easy, and inexpensive. I’d say it rounded out to be around $2 per person (dinners only) for the whole week. Wow! Here is the rundown on what we had for dinner….
Tuesday: Homemade Pizzas (Tuna Melt & Ham)
Wednesday: BBQ Pork, Zucchini
Thursday: Black Beans & Rice w/ Sausage
Friday: Fish dinner from our favorite local joint
Saturday: Hot Tuna & Noodles
I was able to make easy substitutions of any non-allergy foods for my son and husband.

Sunday: Driving Day – whatever we throw together
Monday: Mini Meatloaf (from the freezer since I need to do after-vacation shopping), Green Beans
Tuesday: Grilled “Teriyaki”* Chicken & Pineapple, Steamed Vegetables
Wednesday: Beef Stroganoff (crockpot)
Thursday: Italian Vegetable Pasta Salad with Diced Chicken
Friday: Potato Nachos
Saturday: Refrigerator Round-up
Guest Post Recipe: I’m gearing up to do another allergy-friendly guest post on Money Saving Mom specific to “no oven” summer cooking. I have several recipes to test this week. I just hope they turn out well on the first attempt because I’m running close to the deadline, having been on vacation.
* I’m going to attempt a soy-free version of teriyaki sauce with some basic ingredients I already have on hand.
