As I said last week, we’ve enjoyed some great new recipes over the past couple of weeks, so I’m taking the opportunity to share them here. Taco Chicken Wings with Gauc Dip was amazing!
A Few Willing Cook Notes:
- #1 – Make the Guac Dip! You will absolutely love it! I did not have chili garlic sauce, so I threw in a clove or two of minced garlic and few shakes of hot sauce. Perfect!
- Although the recipe is for chicken wings, I used chicken legs. We gobbled them up just as we would have wings and it was probably a little less messy and less expensive.
- Fat of choice? I think I used coconut oil.
- As per the recipe, I broiled the chicken and I will use this method again. The chicken was so crispy. It may have a taken a little more time because the legs are thicker than wings, but I just kept an eye on it until they were cooked through.
And that’s about it. Put this great chicken dish on your menu this week, serve with the guac dip, some refried beans or mexican rice, and pico de gallo, and you will receive accolades from the table.

For the first weekend in what seems like months, we have no plans. I think it will be nice to lay low, but I’ve gotten out of practice having to plan meals for the entire week.
Sunday: Pot Roast, Red Potatoes, & Carrots (There’s nothing like a traditional Sunday meal!)
Monday: Pork Tenderloin, Spaghetti Squash, Baked Apples
Tuesday: Black Bean Loaded Sweet Potatoes
Wednesday: Real Food Taco Soup
Thursday: BBQ Pork (from Monday’s leftover pork tenderloin), Potato Wedges, Green Beans
Friday: Orange Chicken (I used to have this awesome Orange Chicken recipe but I can’t find it now. Any of you have one that you recommend?)
Saturday: Refrigerator Round-up

I’ve never seen any family eat more guac and avocado than ours. I got into some bad guac a few years ago and haven’t been able to take it since.
I bet the Taco Soup is amazing. I’ll have to try that on one of these upcoming chilly days since Chili is off our list now, too.

Thanks for sharing your meal plan! You would love the Taco Soup. It tastes very fresh with a lot of flavor. Chili isn’t on our meal plan very often either, so this is a great alternative that everyone loves.
