I love finding recipes to spotlight here on occasion. I take it very seriously though. A recipe has to really “wow” me to spotlight it, which means you should try it out too!
For this week’s spotlight recipe, meet Tessa the Domestic Diva’s Dense & Chewy Pumpkin Cookies with Maple Frosting. I left the chocolate chips out of the recipe because I did not have any Enjoy Life when making them. Instead, I decided to sub them for the amazing maple frosting! Everything else in the recipe is just as Tessa devised it. The flavors in the cookie sent me on a Fall frenzy to flavor wonderment. (Ok, that was a little dorky!) You get my point though. I absolutely love my Whole Wheat Chocolate Chip Pumpkin Cookies (DF/EF) as well my Gluten-Free Pumpkin Cookies, but this recipe is just as amazing, especially with the maple frosting.
Make up a batch today to take to a Harvest Party, have a friend over for coffee, or indulge in them yourself for breakfast, snack, and dessert. I’m certain you’ll love them too!

Sunday: Homemade Sushi!!! We tried our hand at Sashimi for the first time with raw tuna! It was delicious and we didn’t get sick
Monday: Salsa Chicken Bake, Brown Rice (This is a new recipe I’m trying out via word-of-mouth. I’ll let you know who it turns out.)
Tuesday: We’re headed out for a family trick-or-treat pizza night. I’ll pack something allergy-safe for my boys.
Wednesday: Pork Chops, Baked Apples & Brown Rice Casserole (recipe coming tomorrow), Spaghetti Squash - Happy Halloween! Be sure to read my Food Allergy Trick-or-Treat Guide.
Thursday: Soup of some sort. I need a soup recipe for my next Money Saving Mom feature, so I need to get creating. Any suggestions?
Friday: Hamburgers, Healthier French Fries, Steamed Vegetable Medley
Saturday: Flag Football Birthday Party for the whole family! Isn’t that fun! I’ll bring something allergy-safe for my boys.

Ive never done sushi at home but I did it at a party once. It’s tricky to get it pretty!
It is difficult to get it pretty. I have to be honest, my husband staged those 3 for a picture
The rest weren’t as pretty, but they sure tasted good! It was only us, so it doesn’t really matter.
