We had a fantastic array of dinners last week. A couple chicken dishes and pizza night. The pizza was out of this world! I can’t wait to share that recipe with you, but I’m waiting for one of my recipes to be published on Money Saving Mom first. It uses the same gluten-free tortilla shell recipe that will be featured at MSM this month for her lunch series.
Anyway, until that time, I have a few other dishes that I want to highlight and encourage you to try. First up is my sister-in-laws recipe for Chicken Cacciatore. We were all fighting over the last bits of chicken in this dish and literally licking our plates (oh come on, you know you’ve done it too!). The changes that I made to the recipe were only slight, especially since it’s naturally allergy-friendly. I used a cut-up fryer chicken along with red potatoes (skin-on), carrots, and mushrooms, cooked in a dutch oven instead of a 9×13 pan. And now don’t kill me, I used a jar of pasta sauce. Yes, it is true, I did not make my own sauce. But the sauce was really good and I found the most natural one that I could find. Follow Tess’s directions and I promise you’ll love the results as well.

Tuesday: Steak Fajitas (We have a bunch of leftover steak from last week that I’m using some of this week and freezing the rest.) on GF Tortillas
Wednesday: Stone Soup (Busy, busy Wednesday night. Expect to see more quick, one-pot meals on Wednesdays for us.)
Thursday: Brown Rice Salad w/ Cherries and Chicken
Friday: Kid Swap Date Night, so I’m thinking breakfast for dinner. Chocolate Chip Oatmeal Cookie Pancakes look too delicious to pass up!
Saturday: Family Event Out
Recipe Experiments: Besides the GF Chicken Pot Pie, I hope to get around to a couple new fall dishes.
