Soaking Beans & Our Allergy Home Meal Plan

A dear friend texted me last week asking if I soak my beans before cooking them in the crockpot.  {As a side note, she told me that she had several cans of beans in her hand at the store, but put them back for a bag of dried beans instead.  All because of last week’s post.  That made me smile 🙂 }  I forgot to add the part on soaking to last week’s post on the benefits of cooking with dried beans.

I read a recent post about the benefits of soaking beans and grains, or the danger of not doing so.  While I admittedly do not soak to the extent in this article, she makes some great points.  I’ll attempt to do so more in the future.

January 13-19, 2013

Sunday:  BLTs, Sauteed Zucchini, Orange Slices

Monday: Eggplant Marinara {I realized when looking for this recipe that I never published it last year.  Oops! I’ll do my best to recreate it and share it very soon.}

Tuesday:  Black Bean Stuffed Sweet Potatoes

Wednesday:  Beef Stew, Naan Bread using my gf pizza crust recipe

Thursday:  Chicken Cacciatore over Spaghetti Squash

Friday:  Breakfast for Dinner – Nut Butter Pancakes, Bacon, Orange Slices

Saturday:  We’re having a special little birthday party for my sweet little boy.  It’ll probably be a busy day, so I’m saying we’re going to have Refrigerator Round-up this night.

Dessert: Birthday Donuts for the birthday boy! He has requested Oreo Donuts that are free of his allergies (dairy, egg, peanuts).

      Hi, Kelly! It is sooo great to hear from you! I’ve felt a little disconnected from blogging since Thanksgiving. It was very busy during those weeks. I’m glad to finally have my head out of water again 🙂 So, I hope to see and be seen a bit more now 🙂
