Crunchy Cabbage Salad
Ingredients
- 16 ounces cabbage, shredded
- 1/2 pounds bacon
- 2 green onion
- 1/2 cucumber, diced
- 1/4 cups almonds, slivered
- 1/4 cups sunflower seeds
- 2 tablespoons sesame seeds
- 1/2-1 cups Balsamic Vinaigrette salad dressing
Instructions
Cook & crumble bacon, if necessary. Toss together shredded cabbage (you could also use broccoli slaw), crumbled bacon, diced green onions, diced cucumbers, slivered almonds, roasted sesame seeds, sunflower seeds.
Drizzle in your favorite Balsamic Vinaigrette salad dressing or make the recipe below. Only use enough to slightly coat the salad, not drown it.
Balsamic Vinaigrette
This is the best homemade version of this dressing that I've had. It tastes considerably better when blended, as opposed to just whisking together.
Ingredients
- 1/4 cups balsamic vinegar
- 3 tablespoons water
- 1/2 teaspoons honey
- 1/2 teaspoons kosher salt
- 1/2 teaspoons Dijon mustard
- 1 clove garlic, minced
- 1/8 teaspoons black pepper
- 1/8 teaspoons basil, dried
- 1/8 teaspoons thyme, dried
- 1/8 teaspoons oregano, dried
- 1/2 cups olive oil, extra-virgin
Instructions
Add all ingredients into blender, except oil, and blend on low until smooth (about 15 seconds). Slowly add olive oil and blend until well combined.
Serve immediately or refrigerate for up to a week or two.
Makes about 1 cup of dressing.
