Last week felt as though I was running a step behind all week because of our overly busy schedule and the fact that I did not post a meal plan. It’s crazy how much I rely on my meal plan every week. It seems as though it takes away half the work. I’m certainly jumping back on it this week!
First I want to spotlight a recipe that we really enjoyed a couple of weeks ago: Orange Chicken. I didn’t deviate too much from the original recipe, and I love that it contains balsamic vinegar instead of soy sauce. Although I didn’t make any major changes to the recipe itself, here are a few things that I did do:
- I converted the recipe to the stovetop because we don’t use the crockpot very much. I browned the chicken in a large skillet, then removed it to a plate. I added in the remaining ingredients and brought them to a boil. I added the chicken back into the skillet and allowed everything to cook together for about 20 minutes. I put a lid on for part of the time.
- I used tapioca flour as my gluten-free coating for the chicken.
- I googled “asian seasoning” and threw together my own spice combination.
All in all, it was fantastic! When we make it the next time, I’ll probably increase the orange juice slightly or include some orange rind because I think it could have used a slightly more orange flavor. This is a personal choice though. We’ve tried several orange chicken recipes over the years and I think this is our favorite, both for its taste and its ease. Give it a try for yourself soon!

Tuesday: Spiced Pork Tenderloin with Sauteed Apples, Salad (We had this on our menu a couple of weeks but didn’t get to it. I hope to enjoy it this week.)
Wednesday: Beans & Rice
Friday: Spaghetti or dinner out with family
Saturday: Busy, busy day full of family Christmas, piano recital, birthday party, neighborhood party. We’ll probably be eating all day! I’ll pack some allergy-friendly food to take along.
Dessert: I have an amazing full dairy pie that I want to try to make free of all our allergies. It’s not going to be easy, but I’m up for the challenge and think I can pull it off. You’ll be the first to know if I do 🙂
