Recipe: Peppermint Fudge Brownies

You are going to love this week’s recipe that is featured on Money Saving Mom.  I’m not sure how I came up with the idea to convert my Granny’s brownie recipe into a Christmas theme and allergy-friendly, but we’re sure glad that I did.

I made these up one day when I had to take a dessert to a school function.  My husband and sister-in-law, both of whom are gluten-free, were fussing at me for putting the platter on the banquet table and not letting them have one (or a few) first.  ”We haven’t had dinner!” :’(  I caved and let them each try one.  Oh man!  It was love at first taste…seriously!

I told them that if they wanted anymore they would have to wait until after the program.  So guess what happened after the program when we got to the banquet hall? GONE!!!  All of them.  Not even a crumb or mint left!  Let’s just say that although my brownies were a hit, I was in the dog-house. :)

      It seems to be a popular request. I’ll give you the recipe here. I need to see if Crystal would like to run the original. The original is just a basic (cake) brownie with icing. I added the peppermint twist myself. I’ll include the peppermint amounts below. If you want to go normal, use a total of 2 tsp vanilla. I also made my version a little healthier by cutting out some of the sugar. If you want a little healthier, I’ll refer you back to the post at MSM. Finally, just chop up your peppermints and sprinkle on top of the icing.

      1 cup butter, softened
      7 Tbsp cocoa powder
      1 1/2 cups all-purpose flour
      1 tsp baking powder
      1 tsp salt
      2 cups sugar
      1/2 tsp vanilla
      1 1/2 tsp peppermint extract
      4 eggs

      Mix together the wet ingredients; add in dry ingredients; mix. Pour into a greased 9×13 pan. Bake at 350 degrees for 35-40 minutes. Remove from oven and allow to cool completely before icing.

      Icing
      1 cup powdered sugar
      4 Tbsp butter, softened
      1/2 tsp vanilla
      1/4 cup cocoa powder
      Add small amounts of hot water or milk to get a creamy texture. Spread over the brownies.

    My toddler adored these brownies! I didn’t have any peppermint extract so I just added about 6 drops of organic peppermint essential oil. Even my kids who don’t have allergies were demanding some. Best brownies ever!
