
My daughter made me lunch! A favorite of mine & includes 4 food groups: vegetable, dairy, protein, & dessert (Hey, that's a food group!).
Last week’s meal plan was somewhat of a bust. Things came up during the week that necessitated some last minute grab & go and a little more juggling than I like. That’s okay though and another reason to be flexible in your meal planning.
The juggling that I had to do last week looked like this…
Tuesday: A fun family event came to my attention where food would be served, but only food that my daughter and I could eat (my eldest was at camp). My husband was running late from work (no different than usual), so he ran in the house and grabbed something. I grabbed my son’s favorite {occasional} treat on the way. Alas, we were 1 hour late and the food was gone. Ugh! So, my husband graciously offered to whip something up for us when we got home. He made egg burritos. Not too bad.
Thursday: I ended up watching my friend’s 2 girls and knew that they wouldn’t go for beef stroganoff. I threw together a quick taco dinner with cooked ground beef from the freezer, salsa, & guacamole. It was pretty good.
Friday: A busy day at the doctor for my son’s dairy food challenge left me unmotivated and uninspired to cook. We ended up at Costco at dinner time and grabbed some salmon to fix up quickly when we got home.

Our Food Allergy Meal Plan for the Week of July 15, 2012
(Note: I have included a few of the impromptu meals that we had last week in this week’s meal plan as I am going to try to use last week’s missed meals this week. Does that make sense?)
Sunday: Grilled Barbecue Chicken Legs, Sauteed Zucchini, Homemade Coconut Ice Cream
Monday: Leftovers (We’re headed out early to an evening ML baseball game. Fun!)
Tuesday: Buffalo Wing Burgers (a new experiment), steak fries, fruit
Wednesday: Pizza on the grill (I’ve wanted to try several gluten-free pizza crusts and I think this is just as good a time as any. There is also this great phenomenon of cooking it on the grill. I’ll report in if I actually follow through
. )
Thursday: Tacos w/ Cooked Ground Beef (from freezer), Salsa, Guacamole
Friday: Salmon, Steamed Vegetables
Saturday: Beef Roast, Green Beans, Rice Pilaf
