Cooking Tip: Lemons & Our Allergy Home Meal Plan

I learned a number of years ago that the best way to get the most out of a lemon (or lime).  This may be well-known to most of you out there already, but perhaps not.  (If I had a working camera, I’d show you pictures.  A new camera is on order though and will hopefully be here in a couple of days…yay!)

How to get the most out of a lemon or lime:

Press the lemon firmly with the ball of your hand on a hard surface and roll back and forth for several good passes, or until you feel it loosen up a bit.  This method loosens up the pulp and allows you to more easily squeeze the juice and extract more.

Our Allergy Home Meal Plan for the week of October 23, 2011

Sunday: Grilled Hamburgers (I used the last of my grass-fed beef and the burgers were delicious!), Homemade Pub Fries, Steamed Broccoli

Monday: Grilled Ahi Tuna, Acorn Squash, & Sweet Potato Kabobs.  (I picked up a pack of Trader Joe’s Ahi Tuna Ends & Pieces.  These and the Cod fish are fantastic!)

Tuesday: Pork Chops, Baked Apples, Brown Rice

Wednesday: Texas-Style Chili

Thursday: Spicy Spaghetti Squash with Black Beans (I’ve not tried this recipe yet, but we picked up a Spaghetti Sauce off Manager Special for only 95¢.  We love Spaghetti Squash!)

Friday: Chicken of some sort.

Saturday: Date Night Kid Swap – We swap children with two other couples every month, so it’s our month to keep kids.  I have to fix something to feed 8 kids & 2 adults.  It has to be super easy and enjoyed by all.  Any suggestions? We might have to go with Hot Dogs :).

Dessert: The Willing Cook-A-Long’s challenge Baked Apple Bites
