Chocolate Coconut Treats & Our Food Allergy Meal Plan

I’m bringing you another great recipe find this week.  My husband has been asking me to make him allergy-friendly mound bars for sometime because it was always his favorite candy bar.  I haven’t felt like taking the time to do a whole coconut filled chocolate bar though.  There was a recipe shared on a previous Allergy-Free Wednesdays that I thought might be quite quick and easy, and thus a better option for me.  I, nor my husband, was disappointed with this recipe.

Dark Chocolate Coconut Treats brought to you by Tasty Yummies is in fact easy and delicious! I only made a couple slight changes to the original recipe.

  1. I melted about 1/3 of a bag of Enjoy Life chocolate chips instead of making my own dark chocolate.
  2. I used regular shredded coconut, but we thought that processing it into a finer shred (as the original recipe calls for) would have been a better texture.
  3. Instead of a regular muffin tin, I used a mini muffin tin.  It made about 20 miniature Chocolate Coconut Treats.

The whole process took me only about 10 minutes, excluding the freezer time.  My husband has been so happy with his sweet treat and I’m happy with the ease.  I will probably add some almonds the next time to make an allergy-friendly Almond Joy.  I can tell that this great recipe will become a staple in my husband’s dessert diet :)  Click on over to the original recipe and give it a try for yourself.

Our Food Allergy Meal for the Week of May 20, 2012

Sunday:  Refrigerator Round-up (leftover hamburgers, lamb, strawberries, rice pilaf)

Monday:  Chicken Taco Salad

Tuesday:  Easy Summer Pasta with Fresh Tomato, Tuna & Feta (for the girls)

Wednesday: Honey Cashew Chicken

Thursday:  Salad with Grilled Steak Slices

Friday:  Refrigerator Round-up

Saturday:  Potluck Picnic Going Away Party

Dessert:  Strawberry Pie (Yes, I still need to fix this and I have lots of strawberries rights now.)

I’m trying out a few new dinner recipes this week, so I’ll be sure to report back if any are keepers.

    We make a variation of these, but everything is just mixed together. These are much more attractive. Maybe I’ll try them!

  2. Ooo these little mounds candies sound so easy and so yummy! Perfect for unexpected candy bar cravings. Hmm I totally understand how they got eaten up before the camera could capture them. ;) Heading over to get the recipe!
