Well, I’m losing two of my kids this week to the great white halls of academia! I’ll still have my little 4-year old shadow along with me though, so I’ll still stay quite busy. Since we’re returning to school, I suppose I’m going to be forced to return to some kind of routine and order around here. This means the return to meal planning.
Our Food Allergy Meal Plan for the Week of August 19, 2012
Sunday: Hawaiian Crockpot Chicken & Brown Rice (This was an excellent first-time dish for us. I doubled the recipe (approximately) and it made so much! I was able to give a friend dinner who dropped by to pick up some other things after a busy day. We’ll have it for lunch leftovers a couple days this week, then I’ll freeze the rest for a quick freezer meal down the road. Very little work with great results!)
Monday: Spaghetti & Meatballs (night before 1st day of school kid request)
Tuesday: Baked Potato Bar or Potato Nachos, & Roasted Corn, Basil, and Tomato Viniagrette (minus the corn and cheese b/c of allergies)
Wednesday: Kimchi (My first attempt at fermenting! Yay!), Korean Barbecue Beef & Steamed Rice
Thursday: Slow Cooker Corsican Chicken, Carrot French Fries, Apple Sauce
Friday: Refrigerator Round-up (aka leftovers) or family may be in town for weekend gathering (always a restaurant possibility
).
Saturday: 90th Birthday Celebration for my Grandfather. Happy Birthday, Grandpa!
Dessert Experiment: Zucchini Ginger Cupcakes (I’m going to attempt a gluten, dairy, & egg free version!) Update: Success! My version of the recipe is coming up tomorrow.
